cupcakes decorating class - wilton method

went for my very first basic cupcakes decorating class this afternoon. it was fun. our instrutor gave us some notes to bring home. how to make buttercream icing for the decoration and of course how to bake cupcakes!

Basic Techniques

there are 3 different consistency.
1. stiff consistency - is used for figure piping and decorations like roses, carnations & sweet peas
2. medium consistency - is used for stars, shell border
3. thin consistency - is used for writing, vines and leaves

correct bag position
1. angle - position of the bag, 90 degres(straight up, perpendicular to the surface)
2. pressure control - heavy, medium, light

also learn how to use fondant to decorate the cupcake as well.
steps:
1. knead fondant. then use rolling pin to flat and use cutter for shapes.
2. then add candy, use wet brush to make fondant stick on one another.

Hi!

Can I ask where did you attend the Cupcake class? Was wondering cos not many places offer Wilton classes. If it is the same one I attended then I feel a bit cheated cos i did so much less than you, there was only one colour of icing other than white and the class never even touched on fondant! and we didn't bake the cupcakes too..... :s

btw, your cupcakes look really pretty!! needless to say, they look so much better than the ones i made during the class..... :(
